I had to look that cooking method up. It says the locals call it Pittsburg black?
Give me reverse sear starting with a smoker, and searing in a cast iron pan over high heat with a small amount of avocado oil. Temp. between 125 and 130. No black anywhere. Yum.
Love a good cast iron skillet steak. Even better with a pad of real butter.
