As a long-time homebrewer, I concur. Higher gravity indicates residual, unfermented sugars.

Water has a specific gravity of 1.000.

Ethanol has a specific gravity of 0.790.

The lower the specific gravity, the greater percentage of ethanol.

At 0.830-0.850 it goes in the barrel.

Where it must sit for several years.
