I’ve been on the carnivore diet the last two years. Frying hamburger and steaks is messing up my kitchen, so I am looking for a good air fryer or oven.
The ones I’ve seen are limited to 500F or less. I want more, at least 600, to get a nice sear without over cooking the center.
Hmm, maybe do a reverse sear in one.
Someone who eats a lot of meat like you is a great candidate for sous vide, which only requires a quick post-cook sear for restaurant-quality steaks. You easily get consistent edge-to-edge color that corresponds to the way you like your meat, and the sear provides the flavor and crust that sends it over the top.

Now you did it - its 3AM and Im hungry!
Alton Brown is doing a series called Good Eats Reloaded, wherein he updates episodes of his original Good Eats series with new better methods he has learned in the intervening 10-20 years.
His burger method is to fry a thin 3oz burger in peanut oil (!!). Im intrigued but havent had a chance to try it.
Been Carnivore here (meat & water only) for 21 months as of today! My experience is featured in Dr Shawn Baker’s book “The Carnivore Diet” on pages 160-161.
For my carnivorous wife & I we LOVE using an air fryer. I make bacon in ours 3 times a day every day cuz’ air-fryer = PERFECT bacon every time!
Must have appliance for Carnivore’s, IMO!
I suggest a gas grill set up outside. I put chunks of apple wood over a burner to get a nice smoke.
Ours is 400*F, let it run for 4 mins or so with a small raised wire grill inside, place meat on hot grill and then cook as normal. Gives nice little sear marks on meats.
