I accidentally ran across a mac-& -cheese recipe that I have used since and found it to be better than anything else I’ve done. It does involve having an Instant Pot. I have both an 8-quart and a 10-quart.
16 oz. package of elbow macaroni
6 cups either chicken broth or vegetable broth
1/2 cup (1 stick) butter
1/2 cup milk
3 cups shredded cheddar cheese
1 1/2 cups shredded Parmesan
1 package Boursin cheese or 6 oz. cream cheese
Put the macaroni into the Instant Pot. Pour the broth over the pasta, just barely covering it. Use a spoon to press down the macaroni. Lock the lid and set Manual Pressure Cook (low pressure on newer pots) for 6 minutes. When done, do a quick release.
Remove the lid and add the butter, stir into the cooked macaroni until the butter is mostly melted. Pour in the milk and give that a couple of stirs. Then, add the Parmesan and a cup of the cheddar. Stir until melted, then add the rest of the cheddar until melted, then add the Boursin or cream cheese, continuing to stir until completely mixed in. Serve immediately.

Oh, I like American Cheese in a grilled cheese sandwich like you used to get in a diner or a drugstore soda fountain counter.
And I just think all those bottled Alfredo sauces are chalky.
I remember singing that parody in school; but you’ve caused me to forget the lyrics we used.
I wonder if America’s Test Kitchen has an Alfredo sauce they recommend?

But a lot of people post their recipes on their own websites, with the qualifier ‘adapted from’; and there are lots of videos extant on YouTube. You might just do a search.
I have some of the cookbooks from earlier seasons, but can’t recall whether they had an Alfredo. But I’m sure there are lots of recipes out there.

I don’t remember them doing bottled Alfredo sauce; but a lot of those reviews are available on YouTube as well.

That sounds good. But I don’t have an instant pot:( I’m sure it’s adaptable, though. :)
