I buy good cocoa powder in bulk and it lasts forever, stored in a cool place. Same thing with baking chocolate. No problem. And I don’t use eggs at all so that problem is solved.
If anyone wants to know the source of excellent dutched cocoa powder, last price was $5 a pound (had to get I think 20#) let me know.
Id love to know your source for Cocoa! Now is the Dutch Coco the one that you need to bloom or the natural cocoa?
