OH MY GOSH the shrimp!!!!! Mouth watering....

It is good. One of my tricks is to use concentrated shrimp or lobster stock to make the grits.

The other is to continuously slow stir the grits while they are cooking. Like risotto, this makes them very creamy. It is theoretically possible to over stir the grits but, so far, this has never happened.
