Early on I kept thinking this just must be an ulcer. Had no clue about my gall bladder until the intensity set in...wow!
I had eaten something that had gone rancid, probably either peanut butter, canned peanuts or cooking oil. Previous nights recently I had the same problem, which I believe came from cookies.
The ultimate problem probably comes from the failure to place preservatives in snack food products. The use of preservatives fell very sharply during the Obama administration. It may also come in part from excessively long storage times for food oil sources. Cocktail peanuts and chips also have large surface volumes, which allow for rancidity to develop fast.
I doubt your issues are the result of rancid foods nor anything Obama did. Cooking oils that go rancid do not typically make you sick as you described, in fact it rarely makes you sick at all, it just tastes bad and or develops an unpleasant sour or metallic odor. Same with peanut butter. And as for potato chips, they may go stale and the oil in them may go rancid but that would as I understand take quite some time for them to go bad to the point of making you sick and if they did, you would likely see mold on them. As to food that goes bad as in spoiled, that would give you the symptoms of food poisoning (severe stomach cramps, vomiting, diarrhea), not what you are describing.
I had acid reflux for many years decades ago and am very familiar with its symptoms.
It is possible that you may now have GERD which is a more severe form of Acid Reflux as your symptoms line up with that, but Im not a doctor (see my tagline) so take my diagnosis for what it is worth which is zero so SEE A DOCTOR!

Nighttime coughing fits with phlegm are common symptoms of GERD. Also see below, the foods that can trigger it. They include some of the things you mentioned such as spicy, tomato based, oily and or fried and nuts and also chocolate. But the best way to find out is SEE A DOCTOR!

As some others have mentioned; try eliminating the oily, fried and the other foods that seem to trigger it; stop eating several hours before going to bed; I would add if you can go on a moderate walk say an hour after your last meal and at least an hour before bedtime, that may help as can losing weight if your are overweight; also try to elevate your head and upper body while sleeping. You can get an inexpensive foam wedge shaped pillow for example. I got one of these as I sometimes get acid reflux at night and have mild sleep apnea and it really helps. Those are all good things to try while you wait after making an appointment to SEE A DOCTOR!
And finally and most importantly - SEE A DOCTOR! and if you can, get a referral to see a gastroenterologist.
You may be allergic to peanuts.
You'll get a bad reputation admitting stuff like that!

I know when I need to drop off a couple of pounds when I get some back-up from the stomach at night.
You need to have your Gall Bladder checked out. I’d make book on it.

I don’t eat sugar so that would not work for me (Oats are like 100% Sugar minus some fiber)
Another this to consider is that PPIs can block absorption of magnesium.
We just switched DH from another PPI to Pepcid.
He is on other meds that tend to strip magnesium, so even with supplements we were losing more than came in.
He has been using Pepcid for about 6 weeks now, and finally, we seem to be making a turn for the better magnesium wise.

Very doubtful this was caused by rancid food.
Sounds like you may have a condition - get checked out.
Never heard that about rolled oats! I’ll try it.
