You cannot eat as much fat and protein you want a day. You cannot overeat which is what worries me. There is no discussion on HOW MUCH these keto people eat.

I fully agree with you in the sense that someone eating 4,000 calories a day of fatty meat is likely to swell up like a balloon! Hence the Intermittent Fasting part - I want to be hungry sometimes.
It is OK to be hungry. Hungry doesn’t make me feel weak. Or nauseous. Or give me terrible headaches. The fuel I’m eating doesn’t burn itself out, with some converted to body fat, and then drive my body to eat more, more more!
I can go 24 hours without eating and feel GOOD on a run. I can go past a bakery after 18 hours with no desire to go in and eat the top off the table. When your body has switched its hormone cycle to depend on fat instead of carbs, you just do not crave the carbs.
You eat less because you WANT to eat less.
Calories play a role. But our bodies and our lives are more complex than “Calorie in. Calorie out.”
