They’re still here. Despite several attempts, no one’s been able to convince Louisiana diners that nutria is good to eat. They are after all, a rodent.

So are rabbits and squirrels. That doesn't seem to slow anybody down on eating THEM.

A rabbit is a rodent too. And, as I’ve explained to my suburb raised wife and offspring (still averse to ever eating one, stewed, fried, or otherwise), it’s nature’s best little four footed meal. Squirrels would be a close second. Surprising that Cajuns in particular, the people who can make chicken salad out of chicken $#/+, wouldn’t try something else in the same genus.
