Just because it may not catch up with you or others for a few more decades doesn’t mean it’s healthier. Most people on keto etc may do well short term to reduce or avoid certain carbs but the body needs them - it’s fuel the body was designed to work well with. Sure the body can burn other things as fuel but it’s like putting wrong fuel in your car, at some point problems occur.
