Roquefort is made with sheep’s milk, gorgonzola with cow’s milk, that is perhaps the only difference, the fungus culture being the same.

That’s why I eat whatever blue cheese is cheapest at the time. There are at least 44 varieties of blues all made with Penicillium roqueforti.
