If I read it correctly, there is a weight problem after you use up fuel.

A reasonable guess is that the center of gravity changes enough to make it unstable.

Yes, if you use up too much fuel you can't get the damn things down.

I thought the two crashes happened immediately after take-off (?). If so, they would have been fully loaded with fuel.

Its why bags are weighed and fuel is weighed. Bags are not just tossed in the AC.

There is so much more to all of this than meets the avg readers eye.

No that is not close to ‘reasonable’. Engineering mistakes may have been made but that one is not at all likely.
