Interesting you should ask because I just made a list of all the seeds I harvested from last year :-)
Butternut squash
Basil
Romano beans seeds
Scarlet runner beans
Oregano
umbrian peas
chives
Beef beans
Arugula
Bad arugula - bugs ate preferentially
Black Simpson lettuce
San Marzano tomatoes
Bell peppers
Zucchini
Cucumber
Romaine
Cilantro/coriander
After looking at that list I realize how obsessive I was. This year I’m going to knock it down to whatever I can fit into for raised beds. I also grew beets and carrots and swiss chard and onions, but they produce seeds the second year so I don’t have any seeds yet.
Hubby grew Giant pumpkins, corn and potatoes. So he says he’s going to fill up the huge garden with all corn. It should be beautiful. I love the way corn rows look. We got a lot of corn the first year but the second year of the crows got it all. I figured out how to keep the deer away but the crows are a lot more problematic. Maybe with the whole garden full we will either have very fat crows or we will get to eat some ourselves.

Hopefully you will eating corn and not crow, LOL
Your garden sounds wonderful!
