These are classic symptoms of an allergy...... when the throat swells from contact with the allergen, breathing is impossible.
Pop artist Andy Warhol never had allergies, was never treated for allergies. After a routine operation, he was given post-op meds.
He died from an allergy to the meds. The hospital team could not get an oxygen tube down his throat......b/c of the swelling.
Seems that Warhol and many from his Factory were ill-fated. I watched a documentary on Netflix about Brigid Berlin, his fat assistant, and she basically rubbed their deceased noses in the fact that SHE, the overlooked fat girl, was still around. She’s 79.
However that does not take place over a 2 week period. Its usually immediate although could be up to 12 hours after exposure. Not 2 weeks

Same thing happened to my wife. No history of allergies. Returning home after having dental work done, her throat started swelling and she gave me a straw to push down her throat if she couldn’t breath. Thankfully the symptoms soon subsided.
Just had my flu shot (at my doctors insistence during a checkup - can’t remember ever having the flu). Came down with a lousy cold, which hopefully is getting better.
