Cook the grits as usual. Pour into a loaf pan and chill, causing them to harden. Slice them, and fry in butter or bacon grease.

Oh okay just like polenta! My only knowledge of grits comes from cooking polenta. But they are pretty much identical, only one is white and one is yellow. And of course one has gravy and the other has sauce, when you want those.
