Is that a Texas cornbread recipe?

Hmmmm...I guess it is :-) We use CornKits, that are known as "A Texas Tradition". People like CornKits because there are no added ingredients, other than what you'd normally use to make cornbread with. Taste just like Granny's cornbread ;-)

The package calls for ⅔ C milk and 1 egg. To that I also add the small can of chopped Hatch chilis, about a ½ chopped onion, sautéed in bacon grease, 1 sm can of corn and about 2 C of shredded cheddar.

Pour batter into your iron skillet (that has about 2 T melted bacon grease in it) bake, per package (425º) for about 25 mins. Let cool a bit, to 'set', before cutting.

Serve with your fave stew, beans, peas, etc.
