Big families work best when the older kid(s) are girls. I’m male but IMHO boys get the ability to be focused, organized, helpful and responsible later (sometimes much later) than girls.

Our family was different.
The eldest was my eldest son, who at the age of 15 was managing a full service restaurant and going to high school, while the owner was stuck in Athens due to some immigration dispute.
No one in his staff was older than 17.
Fortunately the owner had left a checkbook with 200 signed checks in his office. (he must have suspected that his stay in his birth country would be prolonged)
My son is presently a building contractor, specializing in building and maintaining restaurants, which he has been doing for the last 24 years.
