Yep. And not sure what is unhealthy about chicken and collard greens. Sounds a lot like the chicken and rice and a salad my mom would serve up.

Serving size - when I was a kid everyone would get a baked potato, a scoop of vegetables, and maybe 4 to 6 thin strips of meat. Dad might have gotten more. I have to shake my head on the rare occasion that we have steak, and my wife puts out a huge slab of meat for all of us.

BTW - the article only talks about restaurants. Does nobody eat at home anymore?

The chicken is battered with egg and flour and deep-fried in unhealthy oils like corn oil or even lard. Might as well pour concrete in your arteries. Likewise, the greens are usually cooked with a big slab of fatback or chopped bacon, and simmered for a long time until they are brown and mushy and completely devoid of nutrients at that point.

I love smothered collared greens with ham. I also love spicy fried chicken. And dagnabit, give me some watermelon’ with some grape koolaid to wash it all down. Good food is good food PERIOD. Yes, I’m an old white man.

Indeed, one can prepare healthy food at home on a shoestring budget.

We had several lean years, but it was important to me that my kids were fed nutritious foods. One thing we didn’t do was eat restaurant food. A whole chicken is $.95 a pound. Roast the chicken then use the bones for stock. Cabbage, eggs, oats, pumpkin-superfoods (list varies) that are inexpensive.

It takes work, but it can be done. Now that I think about it; we ate healthier then than we do now that things aren’t so hard.
