The chicken is battered with egg and flour and deep-fried in unhealthy oils like corn oil or even lard. Might as well pour concrete in your arteries. Likewise, the greens are usually cooked with a big slab of fatback or chopped bacon, and simmered for a long time until they are brown and mushy and completely devoid of nutrients at that point.

Because first significant population of the African American Community either of those things are nearly impossible to accomplish. Therefore they vilify in order to not have to take responsibility for their poor choices or their lack of intelligence

You’re asking me? I don’t really know where the line is drawn. Back in the days when the term was coined, I think it referred mostly to down-home Southern poverty foods like pig’s knuckles, chitlins, ribs, fried fish and chicken, and bitter greens, drenched in fat, salt and sugar. And then the berry or sweet potato pies, crusts made with lard.
Imagine referring to any type of food as [Any Race Other Than White] food.

I know it is fried chicken - and that is bad. So it isn’t the chicken that it racist - it is how it’s prepared I guess. I didn’t know about the overcooking the collard greens with ham. I’d give it a try, but not sure I would enjoy it. (Being a Yankee and all that!)

All sorts of types of food (Italian, Korean, Chinese, Thai, etc.). And I imagine that in all of those there is also certain foods that are healthier than others.
