They missed a marketing opportunity here.
They should sell Gingerbread Men, Women, Trans Men, Trans Women (Gingerbread Men with pink frosting), Bi (Both Blue and Pink frosting), Queer and whatever else they can figure out how to render.
Then let's see which ones sells best. I bet it will be the original two.

Yep, we need to be sensitive about the lesbian, gay, bisexual, and transgendered gingerbread people. And there are over 50 gender identities, so to be inclusive, they need gingerbread images of ALL of those identities.

It is heteronormative and binary of them, to just have man and woman. It doesn’t matter that they are gingerbread. We have to think about the larger message sent to the society by these characters.
