I wonder if those charges, if not used, can be charged back? If so, the vendor is also charged a fee. Maybe I am wrong and they can charge that much simply for the opportunity to reserve a seat.

If you use a credit card to reserve a hotel room.... that room is yours and you can arrive at anytime after 3PM. This is a restaurant with a definitive time... so if you call on the road and say you are delayed.... Bam! You're hit for the money. They don't know who you are.

Any traveling person who thinks would never eat there.
