Gator to me is as chewy rubbery as it looks. I’ll take a pass on the iguana too however if it was the only food available i’d partake of it charbroiled.

I think it’s succulence or lack thereof depends largely on how it’s prepared. Not saying that from personal experience, but from watching cooking competition shows.

Depends with gator. Generally best as a sausage.

Parts of it are rubbery. You need to know how to prepare it. We used to have a restaurant near me that served gator ribs. Couldn’t get enough of those.
