Funny you should say that. I always want cheese on my pizza, I love cheese (not the stinky kinds though). But the first time I went to Rome, and was eating in a famous pizzeria with family, I did not even realize until it was half gone that my pizza had absolutely no cheese on it. It was sensational.

I went to Roma when I was 17 and was disappointed and disgusted by the pizza there — not to mention left hungry. My operational definition of pizza was formed on the west coast (of the U.S.) and not in Italy or foreign places like New York City or Philadelphia. My tastes haven’t evolved to this day and cheese remains one of the only two necessary ingredients of (real) pizza.
