This will be mostly used for Korean style barbecue, so I'd like to have my guest cook their own meat.

As long as it is not made of material that will melt (plastic) then heat alone should not affect it. A wooden table should suffice. Perhaps something like this that folds up for easy transport.

You are over thinking this.

Heat goes up the only heat going down will be the radiant heat conducted from the upper section of the grill. I cook on a card board sheet so it is easily disposed of.

That said common sense has a fire extinguisher near by in case some one were to tip the grill.

Best food is cooked low and slow.

The fire point of card board is 496° The ignition temp is over 800°

Lots of nice ideas...

If you are thinking utilitarian then a piece of scrap 3/4” plywood would work. Or a small footprint of bricks on a table. Give it a test, monitor the heat underneath, and go from there.
