This will be mostly used for Korean style barbecue, so I'd like to have my guest cook their own meat.

You are over thinking this.
Heat goes up the only heat going down will be the radiant heat conducted from the upper section of the grill. I cook on a card board sheet so it is easily disposed of.
That said common sense has a fire extinguisher near by in case some one were to tip the grill.
Best food is cooked low and slow.
The fire point of card board is 496° The ignition temp is over 800°

If you are thinking utilitarian then a piece of scrap 3/4” plywood would work. Or a small footprint of bricks on a table. Give it a test, monitor the heat underneath, and go from there.
