The rolls are really good! We didn’t have sandwiches for dinner because hubby was sick of sandwiches. So I threw together a Frito taco salad. I’ll make them for lunch tomorrow. But I did split one in half and had it with butter. Yummy!

Most of them are a bit short, due to the pans being shallow. I’ve never had a Schlotzsky’s sandwich so I don’t know how much bread is typically on one. Each of my loaves is probably an inch tall, with the taller ones Baked in a little springform pan’s maybe an inch and a half.

I’m thinking your idea of baking the while thing in a larger cast-iron skillet would be good. The sides are taller so it could rise up more. If that’s how they’re supposed to be? It sure would be easier. They all stuck a little except the one in the cast-iron. I wasn’t very generous with the spray.

You're welcome, sometimes praying is all I know to do.

It has just been crazy the laws that have been passed there.

CA sure has been on a role lately in passing crazy laws or trying to such as it's against the law to refer to marriage as between a man and a women, home schoolers have to be taught a curriculum the government provides, got to control and propagandize the kiddies which is what many home schoolers are running from, illegals can serve in the CA government, and on and on. I have many cousins with their families and nieces and nephews with their families living in La-La Land.

I’m not sure if I’ll get around to posting a ping today. You are more than welcome to - the list is on my homepage. I hurt my hand gardening yesterday. I’m OK with just putting up random posts on my phone, but if I’m going to ping a lot of people I want to use the main computer, which would require typing. I can see what I’m doing a lot better there! Less typos, etc. Hopefully my hand will feel better real soon and then I can get back to it all. It’s like I pulled a muscle in the middle of it. Really weird.

Gardening his torture for our hands. Pulling weeds is painful, not only for the weed but our wrists as well. After an afternoon of ‘weeding’, wrists become so painful just to lift a plate is darn near impossible. You never know when pain will strike - the glass could easily be dropped and soon found in hundreds of pieces on the floor. Suffered Carpal-Tunnel/Syndrome for years and when it shows up once again, typing is a challenge at best.

Busy week this week. Will be ‘out’ more often than not. Give your hands/wrists some TLC. Take care!

TIN CANS

There are many articles with suggestions on useful things to do with empty tin cans.
Just do a search for "what do do with a tin can".

When camping on a shoestring this is what we used to do with a large can like a #10 or #12 (approx. 1 gallon size).
Back in the day it was often called a Hobo Stove.
You can cook directly on the top or with a small pan or pot.
A second tin can makes a handy small pot to heat liquids.

Easy comfort food recipe while watching your weight. I have been losing weight by eating mostly veggies and mild fruits, with minimal meat and dairy. I love this flavorful soup whenever I get a craving for potato chips, fries, hash browns, etc. It has fewer calories than fried but satisfies potato cravings! I make an entire bag of potatoes and divide the soup into pint containers for the freezer, or share it with friends.

Genovese-Style Potato Soup

INGREDIENTS

5 lbs (1 bag) Yukon Gold potatoes
32 oz (1 box) chicken broth
1 cup milk or yogurt
1 large carrot
1 small to medium yellow onion
3 stalks celery
2 cloves garlic
1/3 cup olive oil
1/3 stick butter
2-3 tsp salt, to taste
1 tsp black pepper
1/4 C dried chopped parsley (or 1/2 C finely chopped fresh Italian parsley)
1/2 tsp cayenne pepper
PREPARATION

Peel the potatoes and cut in half. Boil for 20 minutes or until a fork inserts into the center of the largest chunk.

Meanwhile, warm the chicken broth in a saucepan until almost boiling. Add milk (yogurt) and stir; turn off heat.

Drain the finished boiled potatoes, then return them to the pot. Add the broth mixture and mash by hand (or in a mixer bowl or food processor and return to pot) until almost smooth.

Strip the heaviest strings off the celery stalks; peel carrot and onion. Chop to small dice.

Warm the olive oil in a skillet; chop garlic to fine dice and add to olive oil.

Increase heat to medium and add the diced celery, carrot and onion. Sauté, stirring frequently, until dice are softened.

Add all the sautéd vegetables and oil to the mashed potato mixture in the pot. Add salt, black pepper and butter; stir thoroughly over warm heat until butter is melted. Finally, stir in parsley and remove from heat.

Divide into servings for table or freezer. Sprinkle a pinch of cayenne on top of each serving.

Homemade Household Cleaners:

Distilled vinegar: helps cut through grease, eliminate stains, & has antibacterial properties.

Baking soda: clean and deodorize surfaces.

Castile soap: a vegetable & oil based liquid soap used as a natural cleaning agent.

Citrus fruits: rinds of oranges, lemons, & grapefruits consist of a natural property called limonene, which helps cut through oily residue & will leave your home smelling fresh & clean.

Citrus-Scented Vinegar
Mason Jar
Lid
Vinegar
1 grapefruit
1 lemon

Wash and dry the fruit. Using a knife, gently slice off the rind of the fruit. Place the rinds into the jar and fill the jar with vinegar. Seal the jar tightly and store in a dark, cool cupboard for one to two weeks. When ready, pour vinegar through a strainer to filter the rinds. Vinegar is ready for use.

Microwave/Stovetop Degreaser
2/3 parts water
1/3 part vinegar
3 t baking soda
4 t Castile soap
8-10 drops essential oils (lavender, orange blossom, mint)
Spray bottle

Floor Cleaner
1 C water
1 C vinegar
4 tablespoon of Castile soap
8-10 drops of essential oils (i.e lavender, orange blossom, mint)
bottle

All-Purpose Cleaner
1 C water
1 C vinegar
8-10 drops of essential oils (lavender, orange blossom, mint)
Spray bottle

Don’t forget about cleaning your fruits and veggies: Baking soda scrub for whole produce. for lettuces, etc. make a solution of baking soda and white vinegar in water. add lettuces chute up or small pieces. swish around for a couple of minutes, drain and cover with water and rinse again.

Thanks, AW. Love hot cream potato soup; never thought to add yogurt rather than milk LOL Although do add sour cream to mashed potatoes. Normally cream potato soup would be eaten with crisp brown toast and crisp fried bacon bits. A meal in itself. Just as cream tomato soup is eaten with popped corn floating on top and chocolate ice cream is eaten with Fritos (which helps to curb the lactose intolerance to a small degree)

Just wow! Finally stopped in at the new grocery store a few towns over. The knee wouldn’t let me get to but half of it and I’m about dead. But glad to report, it was almost like going to a big city grocery. Fifty bazillion different olive oils. Countless deli type and jarred olives. Saw my first dragon fruit in real life - yeah, I know, deprived. Didn’t find any truffle oil though. The knee won’t let me shop there often but at least it’s an option when I want something better than moldy strawberries at my podunk store.

That’s my plan, I’m taking it easy this week. I’ve had surgery for intersection syndrome (a tendinitis) and radial tunnel compression. The pain now is as bad as it was before the surgery is. And I can’t have them again! So I am alternating heat and ice, hoping to get it manageable again. In comparison, I was doing darned good before this! The ironic thing is that ever since I drove to Nashville to see the orthopedic surgeon last October, my arms have never fully recovered.

I love that concept, such a simple one and something all of us have around. And presto, we have cooking implements! A stove and a container for holding the food. How great is that :-)

I didn’t know that a number 10 can was the same size as a 3 pound coffee can.

Sounds delicious. Do you find the potatoes take on a strange texture when frozen and then thawed? Perhaps they are mashed enough that it isn’t an issue.
