I adore arugula!
I wont pay the prices they want for it here, though. Thats one of the 4 things i miss about California - the produce! You cant beat the freshness and price of locally grown stuff.
So i planted some in September- and was thrilled to see how easily it grew! I just had the last of it a week ago. It lasted through several frosts. Next year ill get row covers and it might last until i can seed again.
I love arugula too! I can eat a bowl full of it.
Easy to plant, grows like a weed. When its warm you must keep eating or at least cutting before the plants bolt. So you can have salads daily. Tastier before it bolts, that is for,sure, so get out there every evening and cut.
ARUGALA BURRATA SALAD
METHOD Whisk ol/oil, balsamic, s/p; toss w/ arugula and tomatoes.
Plate and top with burrata. Cut into burrata to let cheese coat arugula;
drizzle w/ olive oil; season w/ pepper. Serve at once. w/ toasted baguettes.
ING 4 c arugula - 2 big organic heirloom tomatoes in slices, 16 oz burrata cheese
2 oz extra virgin olive oil for garnish tb balsamic salt/ black pepper to taste
toasted baguette slices
