I know a vegan...she’s in her 20s and very fat.

She is very rare, and not the norm.
It's not that vegans just stop eating meat. It's a whole life style change. Their whole life revolves around what's in their food.
Every vegan I know only eats organic, never eats process foods, no sugar, no snacks, no junk.
You can't even get a normal piece of bread at my sister's house. Her bread tastes like cardboard.

It's impossible to gain weight when you eat like that. However, if you just stop eating meat, and make up for it by eating a bunch of other junk. I'm sure you would and could get fat.

This.

I knew a vegetarian liberal who was overweight.

She took a bite of a pepperoni pizza one night, and then got hooked on animal protein again.

She immediately lost 20 pounds.

Go figure.
