Just use WIN 8.1 instead, it's not quite as fast? as Win 10 but it doesn't have the auto updates "yet?". I run it using "Classic Shell" which for the most part runs like Win 7. I just wish that I could get rid of all the Windows Store junk.
The real reason Microsoft is killing off all the old software is to force people to use all the Windows Store apps instead and make Windows a single source (Microsoft) machine so they could control everything on it.
I also use Spybot Anti-Beacon to kill off as much of the spyware as possible.

Yep. Software as a Service. Add in Cloud, so even your data isn’t yours anymore, and you’ll keep paying fees for the software and the storage until you are ready lose access to all of your data.
Really looping back to big iron, except instead of an IBM mainframe, racks of blade servers owned by a handful of mega companies willing to carry out the directives of the New World Order.

Yeah, I use ShutUp 10 to try to minimize the spying as much I hope you can and Classic Shell just to get rid of all the stupid Windows 10 crap boxes that proliferate on your screen. Plus I use Private Internet Access as a VPN.
I don't want my PC to be some sort of multi-media entertainment center. It's just a tool, and I want to keep it that way. That's why Linux is so appealing. It's so simple and clean and uncluttered.

Unfortunately I did not save a Win 8 restore point, nor did I copy all of Windows as of Win 8 to a backup place. With win 10 1st install you had 30 days to go back to your Win 7 or 8.1. After that the restore point back to it was lost - unless you made it yourself.
