Ironically my cholesterol is low despite the fact that I have multiple eggs just about every day. I actually prefer the eggs fried over easy but for portability, nothing beats the hard boiled egg. I take them to work most every day and have them with a tin of King Oscar sardines - another superfood.

I think the bad rap eggs get (for cholesterol) is undeserved. Actually in the absence of eating cholesterol, your body will make its own cholesterol. So you can't really avoid cholesterol. The key is eating healthy and exercising regularly.

Making the perfect hard boiled egg is difficult. All too often, people overcook boiled eggs and the result is an unappetizing rubbery egg with the yolk surrounded by a green ring.

I find the best way is to let the eggs come to room temperature and then cover under an inch or so of water. Put in one of those egg timer things as seen on TV. I bring the water and eggs to a boil and let it boil for about 60 seconds. Then heat goes off as soon as the egg timer gets to the soft line. Then once the egg timer get to the line between soft and medium, I pour out the hot water and cover the eggs in cold water. After about 60 seconds, I remove the eggs from the pot and put them back in the carton.

At that point, you have near perfect boiled eggs most of the time. The egg yolk remains soft and moist and is actually orange (not yellow) in the center and slightly watery. That is the perfect boiled egg.

If you worry about BAD cholesterol don’t use oil, margerine or hydrogenated lard ... just slap a sheet of parchment paper in your skillet and fry away.
Me... I appreciate Bacon Grease or Butter or Real Lard and it is part of the meal and it wouldn’t be the same without it.

Just a note on cholesterol...it is not a disease. The drug companies and the doctors want us all on statin drugs...pure poison. Statins cause stroke and heart attacks.

Statins cause the liver to stop producing cholesterol. Every cell in our body needs cholesterol. Especially the brain. Statins can cause dementia like symptoms.

The less cooked egg is the best for us, health wise. And the yoke is better for us than the whites. An egg smoothie, made in the blender by putting a raw egg in, turning it on, adding a couple tablespoons of coconut oil dribbled in slowly, than adding fruit or whatever you want in the smoothie for flavor, is very healthy. Use your imagination!

We will soft boil eggs and clean the egg out of the shell into a dish, add butter, salt (Himalayan) and pepper to taste. Might drizzle some hot sauce on the eggs.
