I bet that works good, easier than boiling. The trick is to rinse them after shredding, and then they need to be completely dry before frying or they'll be soggy. This is a PITA. Have experimented with this, because ORE-IDA and everyone wants WAY too much for a bag of frozen spuds. It's insane. But that's the price for convenience. Potato chips and corn chips are off the chart too. The fricking bag probably costs as much or more as the food.
