Used to ride quite a bit myself, want to get back to it.
I’m in South Florida, its flat.
Any recommendations on a new ride?

Get something that fits you and feels comfortable to ride. Tweak that some if you want more performance. I have 8 bikes so my tastes are all over the board.
The main thing is the ride, not the steed.
