There is evidence , thought not much, yet, that there is something very wrong with American white ENRICHED flour. I can’t digest it, or commercially made bread. I get dizzy and sick and migraine within minutes.
But I can eat home baked goods and bread if they are made from organic unenriched wheat. It’s not the gluten I can’t digest. I can digest the plain rye crackers that have as their ingredients rye, salt, water. It’s the enrichment, probably especially the iron.
