There's no stopping it now. The tipping point happened when X% of the population never had a good pizza in their entire life. Wouldn't know a good pizza if it hit them upside the head. I don't know what X is exactly, but I knew pizza lovers were in big trouble when I'd complain about the lousy pizzas in the West and Midwest, and people out there would look at me like I was from Pluto.

People like to say that, but I doubt you’ve been to all that many places here out west. I’ve had New York pies and they aren’t any different than what we have out here.
I like to watch the Diner, Dives, and Drive-ins show. He shows that great pizza is found all over the country, even out here in the west.

Most of the country only has chains... Been that way for years now. Small chains just need an app network to compete. Adapt or die.
