By far the tastiest steak is first cooked Sous Vide, then given a quick searing on both sides. Doing it that way cooks it perfectly every time, and keeps all the flavors and odor in the meat.

On "Knife Fight" this last season, one chef sous vide'd a steak, and got reamed by the judges for eschewing the grill setup in the kitchen, and turning out an inferior product.

Can't remember what mandatory ingredients the steak was used to complete a dish for, though.

But hey, if it works for you...

Sous Vide Cooking leaches estrogens from the plastic. My “guys” don’t like that!
