A big part of the code of Bushido was suicide. Which as someone like me who is Japanese, I do not understand that. What honor does one take in ending their own life?! My grandpa did NOT like that. He viewed those who chose young pilots to carry out ramming their planes into allied ships as “tyrants” and called the pilots who did carry out their wishes that, they were “cowards” or “That’s cowardice” as he said in his journal. He was one of those chosen and he did not carry out any Kamikaze mission despite lying to his superiors. He pretended he was going to crash into ships, and fooled the allied planes giving chase. Which some of those planes ran into their own ships as they had no time to correct their flight killing themselves and those aboard. He turned left and right, weaving, and dodging in and out from bullets and barrel rolling as the bullets continued to head his way, with his plane taking over 200 rounds. Not being shot one time. American pilots could do nothing other than rock their wings commending my grandpa out-maneuvering them. It was him against 3.

Even then it is not something I agree with, but have tried to understand, despite my disagreement with it.
Many ranking German officers and others throughout history have been known to choose suicide over facing either failure, their coming loss of status, or the wrath and derision of their countrymen for being on the side that did not win the war.
The mentality in the West can be tracked at least to Sparta: 'Come back carrying your shield, or carried on it.', essentially a 'win or die trying' attitude.
I would guess your grandfather saw the Kamikaze flights as an act born more of desperation on the part of commanders than a matter of honor or skill.
That your grandfather was a talented (not just skilled) pilot is evident by his evading pursuers and the hailstorm of antiaircraft fire which was doubtless directed at him. That he had the courage to defy the order to crash into an enemy ship is commendable, and speaks of great inner strength, although I would not doubt he may have revisited that decision in the following years.
That his enemies waggled their wings in respect speaks volumes.
Similar accounts of such salutes are known from the European Theater of the war, as well as WWI, so it is pretty much a universal gesture of respect.
Warriors respect warriors, and your grandpa was one.
There is never any shame in that.
You mentioned his journals. Did they just cover the war years, or were they more extensive?

Suicide for the greater good of the society is an honorable concept. This concept exists in Christianity, as well, when Jesus Himself said, "No greater love hath a man than to lay down his life for his fellow man (John 15)".
The ultimate sacrifice -- your own death -- for your fellow man, is a sacrifice of great and purest honor.
I have a generational anger at the Japanese who killed my fellow Americans so long ago, but I have no personal anger.
However, I do understand and respect their code, for it is my code.
