Thanks and I'm definitely feeling better with this kind of eating. I have lots of energy and feel 10 years younger already. I have sweet potatoes as part of my regular diet, maybe 2-3 times a week, with butter. Very health food. I might put white potatoes (or parsnips) into soup.

With potatoes, I eat the skin. I see so many people discarding the skin on baked potatoes. Drives me crazy as that is packed with nutrients and fiber.

I love the skin. Also if they are organic potatoes or if you know the great soil they were grown in, don’t overscrub them! Nutrient rich soil is good for you!

I’m in an airport now getting hungry for potatoes. Love potatoes and eggs...
