Slow Smoking Bnls Deer "Ham"

Slow roasting BRT Deer ham roast with dry rub of Kosher salt, pepper, paprika, garlic, onion powder, cayenne etc etc.

What's your experience in proper temp to cook, internal temp when done etc. Any other suggestions would be much appreciated.

I use an Emson pressure smoker.

45 mins and just about anything you put in it will be falling apart.

I’ve had really good luck with the sause vide method where you cook at about 140F - 150F in a vacuum sealed bag in water.
The entire piece of meat will be cooked to that temperature.
When you take it out of the bag you can eat it directly or roast the outside with a quick run in a hot oven or fry pan or with a propane torch. Do a search to find times for the weight of meat. I have only done small venison loins so far.

I sometimes put a little tenderizer in with the spices in the bag before sealing if the deer had not been properly hung before butchering.

Slow roasting in large kettle grill at 225-250, add cheery chips every now and so often.

Never even knew that existed bnut that’s pretty cool.

I do pork butts for pulled pork quite often on my Weber. Does the Emerson work for that?

I've smoked just about everything in it. Pork beef chicken tuna cheese salt veggies, it plain pressure cooks too, rice gumbo soups, even made brownies in it a few times.

Tastes as good as any take out joint in very little time. Frozen chicken breasts take about 45 mins. Thawed 25. Frozen ribs are fall off the bone in 45 mins. I usually dont even use spice or sauce, natural smoke tastes pretty good by itself.

I’m sold.

Was going to ask the wife to get me one for Christmas, unfortunately it doesn’t appear that anyone has them.

ebay was where i got mine. They take the time factor out of smoking, and stuff like beans. Make good hardboiled eggs too, no boiling no cracking.

I found some. Hammacher Schlemmen has them for $149 with 7.95 shipping. Not shipping till 12/30. I went to the Walmart site and they had it as an ad, bottom left of the pressure cooker ads.

Mine is going to be a Christmas gift for son in law so I will wrap a box of ammo with a note & description of the pressure smoker.

Also found some on e-bay but I believe those are all returns.
