You are right. Good tamales are hard to find. Very few Mexican restaurants in Southern California have them on the menu. The masa (corn meal dough) must be made by hand daily and the tamales served fresh. Eating old pork tamales flown in from Mexico city gives new meaning to “making a run” for the border.

I can make really good tamales. Was taught by a friend who was a nun from some Podunk town in Mexico. RIP Sister Evelyn. She died from lung cancer years ago.
