You’re posts are really timely, and I can’t tell you how much I appreciate them. I got diagnosed on Monday with Diabetes.
I have an uncle who beat diabetes with a diet featuring raw vegetables. I mentioned that and Dr. Fung’s intermittent dieting and my doc vigorously shook his head yes. Said diabetes was definitely beatable.
I called my uncle up and asked him if it was still working for him. He read me his recent blood sugar readings all in the mid 90’s. He was diagnosed some 40 years ago. Still has it under control, no meds, no insulin.
He said he cut out all sugar.
For Breakfast he eats a bowl of cereal ( a mixture of cherios, mini wheats, and raisin bran) and half a banana or half an apple. (My doc said skip the cereal, too many carbs, eat eggs and sausage instead, said coffee sweetened with stevia was okay too.)
For lunch he has 7 raw vegetables and a half of a sandwich with meat and cheese. (piece of cabbage, 1 radish, Cauliflower, Carrots, Celery, Turnips, Sweet Potato) I asked “no tomatoes?” and he said if I get a hankering for a tomato I’ll eat one. So he varies it some. I think he needs more dark greens but it’s worked for him.
Supper varies but he said he eats a lot of soup and even has a desert, a small piece of chocolate cake or a single cookie.
I think your uncle was probably misdiagnosed. Also he certainly didn’t cut out all sugar if he is eating fruit, processed cereals, cookies, and sweet potatoes.
