Forgot to add...for the twice baked potato casserole, if doubling the recipe...instead of using more potatoes, I use a head of cauliflower.

cut up (appropriate size) cauliflower, steam until mashable tender...then also place in recipe.

In fact when I now make mashed potatoes, I now make it with one head of cauliflower and 4-5 potatoes...adding chives.

Freezes well.
