I took a peek at your profile to discern your location, and I’m assuming you are in the UK. I know they have some wacky hate speech laws, but it sounds like you haven’t be threatened with any work action so far.
My immediate advice would be to take a breath and find your inner calm. If they call you in to chat, then choose whether you really need to fight this fight early in your career. This pc nonsense is pervasive everywhere, but it seems especially so over there.
Perhaps save your thoughts, to which I agree, on this matter for home. Be publically contrite in the meeting and live to fight bigger battles in the future.
