This is definitely due to the pig eating grain that’s had a rodenticide such as Diphacinone added to it. The poison has a blue dye added to it so that you can positively identify animals which have been eating it.

The hog must have been eating small amounts of it over a period of time in order to build up that much dye without dying from the poison.

Probably a fat soluble fluorescent co pins from a mushroom or lichen or something else the pig was eating.

Hydrophobic aromatic compounds often are fluorophores and if ingested will accumulate in the fat cells.

A little bit of chemistry will answer the question.

The blue fat phenomena is real and though still rare here is widespread in Uganda, who public health authorities are warning people not to eat those pigs.
