1) use parsley instead, well chopped, or
2) use ground coriander seed instead(fresh ground is much better, IF you have whole seeds). Only about 1/2 to 3/4 tsp, though...certainly NOT a TBSP (unless you REALLY like coriander; that much will overwhelm the other flavours).
There's always a fix for a distaste for a particular herb.

I am good with coriander, I use it in baking mostly though. the bacon sounds like a great addition, I have never used in guac.
