The fish was fresh frozen in water right after the guy caught it, so it’s fresh, but it’s just little pieces. I’ll figure something out.
If they are good quality, I’d season, dust with flour, pan saute for a crust (finish in the oven if you need to) and then serve with a beurre blanc.
You’re off for the big day?
I’m staying in the DC area this year. Looking forward to local festivities and a mini stay vacation.
