My father often recounted how his mother used to make souse (head cheese) on Christmas eve which they would enjoy after Midnight Mass. Fortunately that family tradition got lost in the years

Head cheese and souse are no longer on my list of foods. Since CJD and CWD are found in neural tissue, I don’t think its worth the effort. Also, if the cow or hog is killed with a bullet there are pieces of metal in the brains. Even with a captive bolt there are little shard’s of bone throughout the tissue.
