I was trying to say:

"Therefore, ask your server to use parsley, not cilantro (in the dish)."

Let's have no confusion here. Perejil is good old parsley; cilantro is cilantro (although some call it 'Chinese parsley', no idea why). I promise.

So, my (haha) Spanish really stank, eh?

well it reads to me as: therefore, one should ask the manner of using the perejil, no cilantro please.

uno se debe decir a la camarera: por favor, no uses el cilantro, sino perejil. I doubt that is 100% accurate but I think it might get the point across!
