Sustainable? I’m pretty sure that any amount of liquid nitrogen that she uses is made industrially, almost certainly NOT with wind or solar power. I would not call making air so cold that it liquifies and then distilling it sustainable in her sense of the word. She is probably the a person who would decry the use of chemical nitrogen for fertilizer (though technically all fertilizer in any form is a chemical)though in this form it is somehow acceptable.

Liquid nitrogen is dirt cheap ,, after all it’s 75% of the air we breathe , abundant doesn’t begin to cover it... For small batch ice cream like this they generally create a “base” and add flavors so that they have very little waste and no refrigeration costs for storage... It takes a powerful mixer .. the largest sold for home use are about right... If they are good at showmanship they do the “mad scientist” thing with their workers dressed in lab coats and wearing goggles..
Should have done a real sweet cherry syrup with tiny bits of cherry solids IMHO.
