I always wondered what made it extra virgin.
The more virgin the better
This place is a stones throw from my house. We got a nice bottle to take to the future in laws last fall. They have homemade Italian bread for dipping to taste some before buying. There’s another olive oil store just a bit further down the road.
I can be pithy, often at length. ;-)

Virgin means only mechanically separated. No chemicals used to extract the oil. Extra virgin has less acidity and is judges “superior” in flavor.
That’s her-little, squeaky voice like a cartoon mouse. I think it was 1970-I was with Nemesis when I heard it-we had just started dating.
And unfortunately, I can only handle a few sips of any whiskey, so I will never be able to fully appreciate them-they smell delicious, but don’t taste that good to my palate...
I hear it in one of the classic rock stations once in awhile-and some company used it in a commercial awhile back-and now I’ll be singing it for days, no doubt...
I’m not fond of tats, but my biggest issue with them is that so many people who have them are dirt poor otherwise - so they are spending money on tats but not on their own food or children. Obviously not everyone is like that - our own Rika loves tats and isn’t a deadbeat - I’m sure she knows many people in her own circles that pay their bills and live well. But so often I see young athletes who claim to be poor but arms/necks are covered! And young women - often with children who can pay for tats and nails but not for their own housing or bills!
There are some olive groves in far S Texas now-the valley area, and they have started to make olive oil. It is not widely available yet, but the local co-op magazine had a feature on the olive groves and oil business.
Now I’ve got to put some extra virgin on the salad I made for my dinner-baby greens, avocado, tomato, onion, egg cheese, anchovies and the leftover grilled chicken from last night, cut in strips-with olive oil it’s a perfect light, warm weather meal...
I have an issue with people who have any luxury extras, be it tats, nails and hairdos that are obviously done at the salon, designer jeans, 100 dollar designer athletic/tennis shoes-stuff that I would not buy-and certainly didn’t when I was a young single mother and student.
If they can afford that stuff, they are not poor, and should not be getting any public assistance-they need to get a job. I’m not interested in having my hard-earned money pay for some welfare queen to buy fancy label clothes and get her nails done...

I bought some flavored olive oil at our local farmers market - it was supposedly make locally. I wonder if it was from those same olive groves?
I forgot cars in my rant-lots of the welfare queens drive new or almost new cars-granted, I drive an old 4x4 because it makes sense for my work and the unpaved one lane roads out here, but there are older used cars, too-I’ve had more than one in my single and broke days...
Look at the label of the olive oil to see if it has the name of a place in the valley on it-if so, then that is where the oil came from. I haven’t seen any of it yet, but I keep looking...
I’ve used the oil - but also bought balsamic vinegar with Fig in it - from Dripping Springs.
Most of them have iPhones too, and tablets.
