Goat ribs were prepared at “El Tio’s” (the Uncle's) inside a walled, open air dining area that surrounded a fire pit. The ribs were on a spit, turned by an electric motor with an exposed chain connecting. I remember thinking the cook is going to catch his sleeve in the chain and be dragged into the fire but it never happened.
After the cook determined the ribs were ready, two guys lifted the spit off the fire and laid the ribs on a big band saw table. The cook fired the saw and buzzed off neat rib portions for about 12 people.
Another goat rib, roasting nearby, was brought in to be finished for the second sitting of the evening.
